Morning Glory Breakfast Bars

Recently Food First reviewed Granola Bars and found it challenging finding a healthy choice in a large Yellowknife supermarket, let alone a small community co-op. One fun potential solution is making your own.

 

Ingredients

  • All bran cereal 2 cups
  • Shredded carrots (about 3) 1.5 cups
  • Drained crushed pineapple 0.75 cups
  • Plain or Vanilla Yogurt 0.75 cups
  • Whole wheat flour 1.5 cups
  • Baking powder 2 tsp
  • Ground cinnamon 1 tsp
  • Baking soda and Salt 0.5 tsp each
  • Egg 1
  • Liquid honey or sugar 0.5 cup (only use 0.25 cup if using flavoured yogurt)
  • Wheat germ (if available) 2 Tbsp

Method:

Hands Preparing

  1. Preheat oven to 375
  2. Line a 9x13 metal pan with foil, leaving a 2 inch overhang at each end. Lightly butter foil.
  3. In a bowl combine cereal, carrots, milk, pineapple and yogurt. Let stand 5 minutes.
  4. In large bowl, combine flour, baking powder, cinnamon, baking soda & salt.
  5. Whisk egg and honey into milk mixture.
  6. Pour over dry ingredients and stir until just moistened.
  7. Spread into prepared pan, smoothing top.
  8. Bake for 30 minutes or until toothpick comes out clean.
  9. Let cool completely in pan on rack. Using foil overhang, remove from pan and cut into bars.
